NUT PASTES , NUT BUTTER

Only the finest ingredients are used to make these excellentnut pastes. The ingredients are processed using technology and standards which insure the highest quality products, while using recipes originating from Old World Austrian bakers. These nut pastes are smooth and made from selected blanched nuts (almonds, apricot kernels, filberts, peanuts) and are preferred by bakers throughout North America. The pastes are specially designed to be used in the finest cakes, cookies, coffeecakes, Danish pastries and icings by the most discriminating European-style bakers. They impart the richest, most full-bodied flavor to tortes and macaroon cookies, and provide an excellent filling for croissants, coffee cakes and bear claws. Custom formulations and blending are available for large volume customers.

The nut paste packaging is distinctive in its convenience and ease of use. Our popular plastic tubs can withstand the freezing process which allows the customer to store the product for a longer period of time, if necessary. For larger users, bulk pails with vacuum-sealed inner liners are also available.

Almond Paste - A smooth paste made from selected blanched almonds and sugar. It adds an excellent natural almond flavor to cakes, cookies, coffee cakes, Danish pastries, and icings.

Filbert Paste - A very smooth paste made from the finest dry roasted hazelnuts and sugar. It imparts an excellent European gourmet flavor to all sorts of baked goods including tortes, cookies and cakes.

Kernel Paste - A sweetened blend of blanched apricot kernels similar in color and consistency to almond paste. It is a unique product with a more intense flavor than straight almond paste.

Macaroon Paste - A unique blend of kernel paste and almond paste with a more delicate almond flavor than straight kernel paste, while being more economical to use than almond paste.

Numac Paste - A mixture of blanched apricot kernels, blanched peanuts, coconut and sugar, with almond flavoring added. It is a favorite in Danish pastry fillings, coffee cakes and croissants.

Poppy Filling - A heavier blend of the finest ground poppy seeds, honey and sugar. It may be used as a filling or as an ingredient in unique Eastern European pastries, breads and sweet dough products.

IMPERIALS

These' cinnamon and fruit imperials are among the most widely used for decorating and adding extra flavor to baked goods or frozen desserts. The imperials are made with a tableted center which provides size and shape consistency from one piece to the next. The cinnamon variety has an exciting hot flavor and a pleasing red color. The fruit mixture has an excellent tutti-frutti flavor with attractive bold colors. Non-flavored pastel egg shaped pieces are also available.

DRAGEES

These are the only gold and silver dragees produced in North America for the baking and food industries.

These small silver and gold shiny balls are made with real silver and come in two sizes. The sizes are the large #5 and a smaller #10. They make a high impact and exciting statement on wedding cakes and other fancy baked goods.

NON PAREILS

The baking, candy and food industries have long looked to our products to fulfill their needs when it came to non-pareils for colorful toppings. Besides the rainbow of straight color blends, these small, colored sugar balls come in different sizes, as well. Normally, they are the 12-14 size, but they can be specially ordered to be smaller (down to 18-20) or larger (up to a #5) size. Again custom PMS color matching and special blends can be accomplished.

Soft Non-pareils, that are generally flavored for specific needs, are also offered.

Non-pareils produced to a custom PMS color match or in special color blends is also possible. Special coatings can be added to nonpareils that enable them to be used as inclusions in high moisture applications.
