Both cocoa butter and cocoa powder
are produced by pressing the liquid cocoa mass through horizontal
hydraulic presses. The press cannot completely extract the
butter contained in the mass, anywhere from 48-58%.
This cocoa powder is naturally produced:
from the start, the cocoa mass does not go through any process
that can modify its pH level. When ground, this trinitario
type of cacao beans from the Dominican Republic becomes
cocoa mass.
